Hawaiian Marinated Flank Steak

  • 2 lbs. flank steak
  • 1 bottle Teriyaki marinade
  • 1 cup pineapple juice
  • 1-inch piece of ginger, sliced
  • 2 large sprigs of rosemary
  • Olive oil
  • Salt and pepper
  1. Place steaks in a large gallon size Ziploc bag.
  2. Make the marinade: Combine half the bottle of the Teriyaki marinade, pineapple juice, ginger and rosemary together in the Ziploc bag with the meat.
  3. Close the bag and swish around the contents until well blended and steaks are covered in marinade.
  4. Place in fridge for at least 24 hours.
  5. Pull the steaks out of the fridge for 30 minutes before cooking and heat your grill up to high.
  6. Keep the remaining marinade to bring to a boil then simmer in a small pan to use as the glaze.
  7. Once the steaks are on the grill, brush the glaze on between each turn. Cook to your desired level of doneness.

 

Grilled Corn and Ancho Pepper Salad

  • 6 cobs of fresh corn
  • 1 ancho pepper
  • 1 bell pepper
  • 5 ounces feta cheese
  • ¼ cup butter
  • 1 teaspoon cumin
  • 2 limes, juiced
  • ½ teaspoon kosher salt
  1. Before removing the husks, soak corn cobs in water for thirty minutes.
  2. After shucking the corn, place on grill with peppers.
  3. Remove corn from grill after 3 to 5 minutes. Be sure to turn frequently.
  4. Leave peppers on grill until the skin is charred and let sit for 5 minutes.
  5. Cut the kernels off the cob and place in a large bowl.
  6. Rub the charred portion off the peppers to discard and cut peppers into thin slices and place in the large bowl with corn.
  7. Melt butter in a small bowl in the microwave
  8. Mix cumin to the melted butter and add to corn and pepper mixture.
  9. Squeeze lime juice over the salad and add salt.
  10. Garnish with feta cheese and serve warm or at room temperature.

 

Pineapple Mint Popsicles

  • 2 cups pineapple chunks
  • 1/4 cup fresh mint
  • 1/4 cup water
  • 2 Tbsp honey
  1. Combine all ingredients together in a food processor or blender until your desired level of smoothness.
  2. Pour into popsicle molds, add popsicle sticks and cover.
  3. Place in freezer for at least 4 hours or until frozen.
